TACO TUESDAY: EAT DELICIOUS(DENNIS THE PRESCOTT’S) SUMMERTIME PASTA SALAD

TACO TUESDAY—-EAT DELICIOUS’S SUMMERTIME PASTA SALAD—YUMMY!!TAKEN FROM DENNIS THE PRESCOTT’S BOOK EAT DELICIOUS—

INGREDIENTS–
SAUCE–
3/4 cup ketchup
1/2 cup dark brown sugar-packed
1/2 cup sunflower oil 2 tablespoons fresh lemon juice
1/4 cup apple cider vinegar
1/4 teaspoon sea salt
1/4 teaspoon freshly cracked black pepper

PASTA
1 pound uncooked fusilli or rotini pasta
1 cup diced bell red pepper
1 cup diced green pepper
1 cup diced yellow pepper
1 cup cherry tomatoes halved
1/2 cup finely diced red onion
1 cup diced cucumber
1/2 cup fresh basil leaves, plus more fro garnish
1/2 cup chopped fresh flat-leaf parsley leaves, plus more fro garnish
1 cup bocconcini(mini mozzarella balls), halved.

DIRECTIONS—
Make the sauce. Combine the ketchup, brown sugar sunflower oil, lemon juice and vinegar in a bowl and whisk until the sauce starts to thicken. Season with the salt and pepper.

Make the pasts. Boil a large pot of water with salt added and cook pasta according to package directions. Drain and run under cold water. Transfer to a large bowl.

Add the ball peppers, tomatoes, cucumber, onion and sauce to the bowl with the pasta. Stir to combine, then stir in basil and parsley. Transfer to large serving dish and top with bocconcini and more basil and parsley leaves.

This pasta dish can also be served several hours later of the next day after chilled in refrigerator.
