TACO TUESDAY:You Are Your Own Gym: Four Food Groups Breakfast! YUMMY!


Mark Lauren makes perfect sense. He wrote another book called, You Are Your Own Gym, which I now have to read after perusing You Are Your Own Gym: The Cookbook. Mark Lauren has created 125 simple, easy to make recipes that satisfy your grumbling tummy that he says we do not need special equipment and we do not need to hire a personal chef, or buy expensive kitchen equipment like those expensive blenders. All we have to do is be willing to cook food when we feel the need—usually before we become famished, like I am right now. The pictures are beautiful , the recipes are simple, what more could we ask for?

For breakfast, Lauren laid out a recipe containing the four food groups:



1 tablespoon olive oil
1 cup finely chopped yellow onions
1 1/2 cups low fat milk
4 teaspoons all purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded reduced fat sharp cheddar cheese 5 russet potatoes peeled and sliced
1 1/2 cups chopped broccoli
4 large eggs
4 egg whites
6 slices turkey bacon cooked crisp and crumbled
1 large tomato, chopped
1/2 avocado, diced


Preheat oven to 325 degrees. Heat a skillet over medium heat. Add 1/2 a tablespoon of oil, and the onions and cook for four minutes, until onions are soft. Stir in milk, add flour, salt and pepper. Cool until slightly thickened. Add cheese and stir until melted. Layer potatoes and cheese mixture in a 3 quart rectangular baking dish. Bake covered, for 55 minutes, or until potatoes are tender.
Heat the remaining oil over medium heat. Add broccoli and cook until tender. In a large bowl beat the eggs and egg whites with 2 tablespoons of water. Season with salt and pepper. Pour the egg mixture over the broccoli, cook, stirring over medium heat until eggs are set. Spoon egg mixture over the potatoes and top with crumbled bacon, tomatoes, and avocado.
