TACO TUESDAY: Cornflake Chicken

Cornflake chicken is a comfort food in the making. It is rather high in calories due to the butter, but you can use less butter to make it lighter.
Cornflake chicken is a very easy meal to make for the entire family. Depending on how many people you are serving will obviously depend on how much chicken you will need. When our family was a little larger, I made cornflake chicken with four chicken breasts.MOMZINGA.COM

INFREDIENTS:

2 cups cornflakes
2 eggs
1 cup of milk. I use 2 percent milk for less calories.
4 tablespoons butter—which is about half a stick of butter
1 teaspoon of salt
a tablespoon of parsley
A pinch of powdered garlic
A pinch of pepper
2 to 4 chicken breasts

DIRECTIONS:

Wash off the chicken breasts in cold water. Shake them off, and set aside.
Get a see through sealable bag and pour in the cornflakes
Use a rolling pin to roll over the cornflakes in the bag.
You may have to pound the cornflakes into smaller pieces.
Melt the butter in a small pan.
Set the oven to 375.
Put the salt, pepper, parsley and garlic into the bag of cornflakes. shake up the bag to mix the spices with the cornflakes.
Pour the cup of milk into a large bowl.
Crack the two eggs into the milk.
Place each chicken breast into the milk mixture,coating each breast with enough milk and egg.
Then place each breast—one at a time in the cornflake bag. Coat the chicken breast with cornflakes. Shake it up,to evenly coat.

Place the chicken in a cooking pan, not a baking cookie sheet.
Pour the butter over the cornflaked chicken—evenly coating.
Bake the chicken for about 45 minutes, to an hour.
