TACO TUESDAY: Pan Seared Salmon with Zucchini and Yellow Squash

I couldn’t resist the good-looking guy, (Bob Harper) on the cover, of Skinny Meals. His kind blue eyes, the muscular abs and the colorful array of food in Harper’s book had me wanting more. Bob Harper’s food looks so good and I am so hungry right now that I am going to tear the page out of this book, and eat it!!

Harper says this meal is super easy to make.

1 teaspoon olive oil
1/2 cup of sliced zucchini, cut into half-inch rounds.
1 cup sliced yellow squash, cut into 1/2 inch rounds,
1 garlic clove, crushed
1/2 cup cherry tomatoes, halved.
1 teaspoon fresh thyme leaves
4 ounces wild caught salmon fillet
Half lemon, thinly sliced.

Preheat the oven to 350 degrees F.
Place a piece of foil on a baking sheet. Lightly coat with 1/2 teaspoon olive oil.
In a bowl toss the zucchini with the garlic, tomatoes, crushed red pepper, thyme, and remaining teaspoon of olive oil.
Place the vegetables on the foil. Top with the salmon. Place the lemon slices on the salmon in a single layer.
Bake for 15 to 20 minutes, or until the salmon is cooked through.

Taken from Bob Harper’s Skinny Meals book, which you should buy. The food looks delectable in this book, and it is relatively easy to cook.
