Momzinga’s Taco Tuesday: SKINNY MEALS’ Sweet Potato Surprise!

Skinny Meals by Bob Harper had a feast load of recipes for the eyes as well as the stomach. Eat this overloaded sweet baked potato for lunch or for dinner. It’s a mere 246 calories. All you have to do to lose weight thus becoming healthier is to eat healthy foods. (WHO KNEW?) I tweaked this recipe a bit, and changed the name, because surprise is aptly fitting!



1 medium sweet potato
Olive oil spray
1 cup chopped veggies (any veggie you desire can be used.) Chop up broccoli, zucchini, broccoli, peppers, tomato, or even cauliflower.
3 to 4 eggs, depending on your preference, beaten.
2 tablespoons plain low or no fat Greek yogurt


Puncture the sweet potato with a fork four or five times. Place on a microwaveable dish and microwave the potato for 5 to 8 minutes. Cook it until it is soft. You will need to check on it starting after 5 minutes.

Coat a medium pan with olive oil spray and sauté the veggies over medium heat until cooked through for about 5 minutes.

Add the eggs to the veggies and scramble.

Carefully take the sweet potato out of the microwave, and cut it lengthwise.

Top the sweet potato with the veggie/egg scramble and add a dollop of the yogurt. You can add yogurt that has flavor to it if you prefer.
